Two breakfast deep

It's Saturday am and I've already accomplished
so much. I'm two breakfast deep and a run already under
my belt.

This was a good week full of quinoa.

Curry quinoa with brussel sprouts and an egg. Sounds
like a weird combo- but it was awesome.

Yesterday for lunch I had a huge arugula salad
with quinoa, beans, craisins, walnuts and loads
of veggies. And a few hershey kisses followed.

I wish I were eating these.

Sadly I am not. But maybe bagel Sunday is in order.
See- I believe in balance. Lots of people try and avoid
things but I'd go crazy if I did that. So I try to
 eat really healthy about 85% of the time. I eat pounds
of veggies everyday. I snack on them, eat tons at dinner and I try 
to include them in breakfast by hiding them in these overnight oats.

This was like eating chocolate pudding for breakfast.
Here is the recipe:

Chocolate Pudding Overnight Oats:
1 banana
1 cup almond milk
1 tbsp cocoa powder
1 tbsp almond/peanut butter
1.5 tbsp chia seeds
handful of kale

Blend ingredients.
Pour over 1/3 cup oats
Refrigerate overnight.
Enjoy!

See- balance can be awesome. I won't lie- I eat
chocolate everyday. I don't miss a single day. If I did,
I'd just die. Ok, maybe not. But I feel that way!

Luckily I love fruits, veggies and healthy things. You get one
body and I'd like to keep my insides in tact and healthy. 
I try to avoid lots of "franken" foods and eat whole foods instead. 
Everyone is of course different, 
but if I can't read it.. I try not to eat it.  

I went for a little 4 miler today to test my legs.
Yup, still in pain. It was a crappy run. I am aiming to 
get my mileage down to under 9 minute miles right now.
Today... eh. 

The rest of the day should be an awesome day. Eventful 
to say the least!

two with friends and cheering on our boys.

Beer and Pizza Happy Hours

It's Thursday!
Good thing because I'm exhausted and I know I've mentioned it before but- this was a long week!

I was tired this morning. Not as tired as yesterday but tired. I still dragged my butt to the gym and did a little baby workout. I came home for some Blueberry and Banana protein pancakes. YUM!!
Many people wonder how I have the time to cook a nice breakfast in the morning. Here's my timeline:
5:30am: wake up- if I go to the gym
7:00am: home to shower, eat breakfast, make my lunch, watch the news and get ready
8:20am: out the door
9:00am: at work... hopefully :)

I busted through work today because I had dinner with my friends to look forward to!

We went to City Girl Cafe in Cambridge. I have walked by this little nook of a restaurant at least 100 times. Finally- we went! It was heavenly.
The restaurant itself is super cute and our waitress was super nice.

We decided to order the antipasto and Italian beers to start. $3 beers = classy women.

The antipasto was amazing! We shared it between the four of us. The olives and cheeses were so delicious! Especially the cheese with honey and walnuts. YUM!
Then it was time for the main course:

We had the Caprini pizza with goat cheese, caramelized onions, spinach and cheese. The second one is a pesto pizza with broccoli. We loved them so much that we had a hard time deciding which kind should be next! Everything was delicious!

Between inhaling our food, we would take a breath to catch up. I'm already looking forward to a little BBQ action this weekend with the gals to bid adieu to fall officially. This will include food, friends and a few margaritas.

Tonight I'm making some spaghetti squash for my lunch tomorrow. If you've never made spaghetti squash you should consider it. Check it out at your local grocery store. You cut in half. Gut it. Place it face down on a pan. Bake at 425 for about 20 minutes. Once it's cooked you just scrape out the inside. Put your favorite pasta toppings! I like mine with pesto and lots of veggies. I eat it just like I would a giant bowl of spaghetti.

Tomorrow is Friday! I hope the day goes fast. I'll definitely eat pancakes in the morning per usual and will definitely have coffee mid-day to get me to 5:30. Hope your happy hour turned into happy hourS and included Pizza and beer! Keep it classy!

Under eye suitcases

Today was a long work day. Actually this has been a longgggg work week! Luckily, tomorrow is Thursday!

I was tired this morning. Beyond tired. I sounded like an 83 year old woman who has been smoking a pack a day since she was 15 and the bags under my eyes were more like suitcases. I was tired.(I'm not complaining because it was worth it!) I knew that a good start to the day would help me battle through. I started with blueberry and banana protein pancakes. Yeah- I eat a lot of pancakes.
These babies are smothered in sugar free syrup and I had some iced coffee to help me wake up a bit.

I went to work ready to face the day! I had a lot to do and my inbox was basically screaming at me with blinking red flags all over the place.
It was a very busy day. So much so that I scarfed down my lunch without breathing and didn't take a break from my desk until 3:45.
I ate some peanuts for a snack. Yup- leftover peanuts from the game. And yes- I shucked these babies at my desk.
I went for the world's best coffee on my lunch. Flavor of the day: Jamaican me crazy! I think it's a combo of Carmel and nut? I like mine with soy... and it's tasty! It helped me get through the day and that's the most important thing I like in my coffee.

After work- Yoga in the park. It was the best way to end my day. I felt really relaxed and at ease after the hour was down. Plus, it was a perk to watch the sunset over the Charles.


I was doing spirit fingers and yoga.

I came home from yoga starving! Weird right? Except it's not weird for me since I'm always hungry. But I got home and these little babes were waiting for me! My passes for the Life is Good Festival came in. Time to celebrate my inner hippie for a weekend!

I made pumpkin pancakes for dinner... with some peanut butter on top. Shocker! It was a great way to end my night. Now I am super tired and I need to wake up and hit the gym tomorrow morning since I have dinner plans tomorrow night! Wahoo!

Cake for Breakfast?!?

Contrary to the title of my blog- breakfast is my favorite meal of the day.
Sometimes I eat eggs for dinner. Oatmeal for lunch. Cereal for a snack.
It is the one meal that can substitute any other and bring a smile to your face!
In bed at night... I think about breakfast the next morning!
(actually, I'm always thinking about my next meal)

This morning I decided to take a stab at breakfast protein pancakes. I found the recipe on my one of my favorite blogs and made a few changes.
Holy heck they are delicious!
Here is the recipe:

1/3 cup of rolled oats
1 medium ripe banana
1/3 cup of egg whites
1 scoop of vanilla protein- you could change this to any flavor
splash of vanilla extract
splash of soy/almond milk- you can use regular if you want
cinnamon dusted on the top of each

Mix all the ingredients together. Make sure you mash that banana!
This makes 2 pancakes so double if you are making for two.


Voila! I topped mine with a little bit of PB and maple syrup.
I also made another batch of iced coffee last night and enjoyed some this morning with Soy vanilla creamer.

Next time I'm going to make these with chocolate protein! Nothing is better than chocolate, banana and PB!
